It's been absolutely ages since I've posted anything on here since I joined Facebook but this one is worthy of posting. We got hit with winter big time on Tuesday! It has been snowing for 3 days. We had a lovely fall this year. Figured we'd have a nice and easy stroll into winter but nope. Full on winter weather, bam!
So in the spirit of the weather I wanted to make a hearty pasta dish and the first thing that came to my mind was Lamb and Eggplant Pastitsio. I've been making it for years. One of Paul's favorites. I made it so often we got tired of it. I think it's been about 3 or 4 yrs since I've made it. Try this recipe. It's pretty much fool proof. I added a bit more garlic and oregano to the lamb sauce and a touch of wine as it was a bit dry at first. If you absolutely don't like lamb, you could substitute ground beef. Our dear friend Allie came over for dinner and we had a wonderful evening as usual. Great company, conversation, wine, music, food. Cheers and Bon Hiver everyone!

She has a BFA from Alberta College of Art and Design and has studied at the University of Regina and Saint Mary's University in Halifax. From This Distance is her second novel.
I'm so proud and happy for her. She's worked extremely hard and long on this one and it's so great to see it come to light.
